The Spicy Sweet Grinch Cocktail

 A touch of sweet and a little bit spicy...perfectly fitting for 'the Grinch'.

Produce

½  Grapefruit, juiced

1 Jalapeno, sliced

2 Sprigs of Mint Leaves

1 Pomegranate

½ lime

Condiments

2 tsp Honey

Baking & Spices

2 tbsp Granulated sugar

Drinks

1 Ginger beer

Beer, Wine & Liquor

2 oz Vodka

Directions:

1. On a shallow plate, combine the sugar and mint. Rim your glass in sugar, then fill it with ice.

2. Combine the vodka, lime juice, grapefruit juice, honey, and jalapeños in a cocktail shaker. Fill with ice and shake until combined, about 1 minute. Strain into your prepared glass. Top with ginger beer and garnish as desired. Enjoy!

Ingredients:

1 whole Camembert

1 pomegranate

Fresh Figs

50 grams of pistachios (weight without shell)

 

Pomegranate Syrup:

1 pomegranate

6 tbsp caster sugar

2 tbsp water

 

Directions:

Boil the ingredients for the pomegranate syrup in a heavy-bottomed saucepan. Allow to simmer for about 13-14 minutes, strain through a fine-mesh strainer, press the kernels against the bottom of the strainer to extract all the juice. Allow to cool at room temperature.

Set the oven to 200 degrees, put the cheese on a tray lined with baking paper and heat in the middle of the oven for about 10 minutes. Remove the cheese and place on a plate or serving platter. Drizzle half of the pomegranate syrup over the cheese, divide the figs into four parts and garnish the cheese with figs, pistachios and pomegranate seeds.

Serve the cheese warm with flatbread biscuits and the remaining pomegranate syrup.
